blueberry oat bake


oat bake
(gluten free, dairy free)

2 c traditional rolled oats
2 tbsp flax seed
2 overripe bananas
1/2 tsp baking powder
1/2 tsp baking soda
1/2 c nut butter of choice
1 egg, whisked
2 tbsp coconut oil, melted
1 c almond milk
1/2 tsp vanilla extract
1/4 tsp sea salt
1 c strawberries, blueberries or nuts

1. preheat oven to 350
2. mix dry ingredients – oats, flax, baking powder & soda
3. mash in banana to dry ingredients. add nut butter & mix
4. combine coconut oil, egg, vanilla & milk separately
5. pour wet ingredients into dry/banana mixture
6. microwave or sautee fruit until wilted, add to mixture
7. pour batter into 8×8 or similar sized glass dish. rub dish
with coconut oil or line with parchment paper prior
8. bake 50-60 minutes or until toothpick comes out of center clean

a super yummy treat for breastfeeding mama’s especially
as oats are shown to increase milk supply! oats are also a great source
of fiber and good for the skin.
